AMAZING STRAWBERRY CHEESECAKE PASTRY BITES

AWESOME! I added some cocoa powder to the cream cheese mixture to make it chocolate, just because I was in the mood, but followed the recipe otherwise, dipping it in the optional chocolate and decorating them with white chocolate drizzle and sprinkles. Of course I couldn't wait for dessert tonight to try them, so I tried one now and they are really, REALLY good! My strawberries were pretty small and not the best, but they still turned out great! Can't wait to make these with better ones.

I had extra cream cheese icing and used it on slices of bananas then covered them in the left over melted chocolate (used Ghirardelli 60% cacao bittersweet chocolate chips - yummy!). I omitted the oil just because it's an extra step and an unnecessary ingredient (it's for a nice shine on the chocolate). I did not use graham crackers because I didn't have any on hand, but I'm sure that would make it delicious as well! Just because someone suggested it, and I had them on hand from another recipe, I put mint leaves on top to add to the glamour of this dessert and a nice pop of color..


Amazing Strawberry Cheesecake Pastry Bites

Ingredients

30 puff pastry shells
1 (8 ounce) package cream cheese, softened
1 cup white granulated sugar
Berries of your choice, I like chopped Strawberries

Instructions
  • Remove Puff pastries from packaging. I like to place them on a large cookie sheet.
  • In a small mixing bowl combine softened cream cheese and granulated white sugar. Mix by hand or with a hand mixer until completely combined and smooth.
  • Put cream cheese mixture in a ziploc bag and snip the end to squeeze into pastry shells
  • Fill each shell with approx 1 to 1½ tbsp filling.
  • Top with berries of choice
  • Keep refrigerated until serving.
  • Best if served with-in 2-5 hours of making. Shells will soften the longer the filling is in them.
