PALEO BREAKFAST

This recipe was really good but I discovered that if you use a large egg with a large avocado, cook it an extra 5 to 10 minutes.
Instead of eating scrambled eggs with the avocado on the side, flip that idea upside down and pop those eggs inside of your avocados instead!  In the oven they go and you have one of the most delicious breakfasts ever.

I've always been curious about egg salad but fairly wary. Mayo as a binder makes me uneasy. I'm glad I pushed that aside to try this recipe though. I like to fry some bacon up and mix it in. Even my husband who is suspicious of hard boiled eggs and avocado said if I made this again he would gladly eat it.



I made this for my husband breakfast and my kids loved it too. The avocado is not too large but is enough for me, hubby and my daughter. I pick the avocado that can be give enough satisfaction and the eggs too is medium size not to big. So easy, simple and very yummy for breakfast or anytime.
