Arugula Salad Recipe

Very Good! My husband and I eat raddichio & arugula salad seasoned with olive oil and red wine vinegar everyday with dinner. This was a nice twist on our usual favorite. I did use our red wine vinegar in place of rice vinegar and omitted the avocado since I didn't have one.
I couldn't find arugula so used other greens. Instead of tossing all ingredients together, I arranged the greens, tomatoes, pine nuts, parmesan and dried cranberries (rather than avocado) on individual plates. I combined the oil and vinegar, salt and pepper and drizzled this over the top. My husband loved it. Will definitely make this one again. This is fabulous!

I was surprised that the simple dressing was so good with this salad. I looooove arugula, it doesn't need much to compliment the spicey flavor. I did add a little red onion and some candied walnuts instead of the pine nuts. Also I added some fat free feta. Was fabulous!



Ever since I first tasted arugula, I've wanted to try it in a salad. I was skeptical at first, but fell in love with this recipe! I'm making it for the second time in a week!
