Caramel Marshmallow Popcorn Balls

My family made this all of the time growing up. For a little more of a chewey caramel flavor, we would melt together 2 cubes of butter and 2 cups of brown sugar to an almost carmelized point before adding in 2 cups of marshmallows and the popcorn (more or less depending on how gooey you like it) We also would add red hots, spice drops, candy canes, nuts, tiny jelly beans, etc, depending on the season and give them as quick gifts.

I originally was looking for a simple popcorn coating for a quick midnight snack, but I came across this recipe and since I had the marshmallows on hand, I thought, "why not?" I'm glad that I did. This was very simple to make (took less than 3 minutes!), and the results are fantastic. I deviated a bit from the normal instructions and used an air popper (much more healthy, IMHO). I also decreased the marshmallows a bit - if I had made this using the standard recipe, the balls would have turned out way too sweet for my indvidual taste. My daughters enjoy this as well.

Caramel Marshmallow Popcorn Balls

Ingredients

1 cup granulate sugar
1 cup light brown sugar
1 cup light corn syrup
1/2 cup water
1/2 teaspoon tartar
1/2 cup butter
1 teaspoon baking soda
4 cups mini marshmallows
13-14 cups popped popcorn

Instructions
  • Fill a large bowl with all of the popped popcorn and set off to the side.
  • Place a large heavy duty sauce pan on medium high heat. Whisk the granulated sugar, brown sugar, light corn syrup, water, cream of tartar, and butter and bring to a boil.
  • Boil for 4 minutes and add baking soda. Take off heat and stir in the marshmallows until melted through the mixture.
  • Pour over the bowl of popped popcorn and stir until all coated.
  • Allow to cool before forming into balls. (Or you could skip forming and eat straight out of bowl.)
  • Store in an air tight container for up to 4 days at room temperature.
  • Makes about 12 popcorn balls.
