I loved everything about this and will make it over and over again. The possibilities are endless as to what it would go good with. Buttermilk is not something I keep on hand but it is so simple to make your own. Fill a measuring cup just shy of a cup of milk and then add a tablespoon of lemon juice or vinegar and let it sit for 10-15 minutes and there you have your cup of "buttermilk". This was great on salad and perfect as a dipping sauce too.
CREAMY CILANTRO LIME DRESSING
INGREDIENTS
1 bunch fresh cilantro, stems removed
1/2 cup mayonnaise
1/4 cup olive oil
2 Tablespoons fresh lime juice
2 Cloves fresh garlic
1 teaspoon apple cider vinegar
1 teaspoon honey
DIRECTIONS
- Place all ingredients in the bowl of a food processor, or in a blender.
- Puree until smooth.
- Taste and adjust as necessary.
- Pour into a covered container and refrigerate until ready to serve.
- Store leftover dressing in the refrigerator for up to 5 days.
