After reading the reviews I decided to use cheesecake pudding mix and see what happened. For me they weren't as sweet as I like. My husband said it was like sweet bread with chocolate chips in it. But I was determined to make this recipe work so I increased the white sugar to 1/2 cup and brown sugar to 1 cup and used milk chocolate chips and decided to use white chocolate pudding.
They were fantastic!! Just as moist if not more! (Cooking them for 10mins). I did notice that the 2nd time they spread out a little bit where as they only puffed up and didn’t spread the 1st time, but I do live on the gulf coast of TX where the temp yo-yos every few days. This dough also keeps really well in the fridge over night and makes it easier to form. I will definitely use in my gift baskets!
Vanilla Pudding Chocolate Chip Cookies

INGRIDIENTS
1 cup light brown sugar
1 cup granulated sugar
1 cup unsalted butter, softened
2 eggs
¾ tsp. vanilla extract
1 tsp. baking soda
1 tsp. baking powder
½ tsp. salt
1 (1-oz) sugar-free, fat-free vanilla pudding (the small box)
3 cups all-purpose flour
2 cups chocolate chips
INSTRUCTION
- Preheat oven to 350ºF.
- In a medium-sized bowl, mix together the baking soda, baking powder, salt, dry pudding packet and flour. Set aside.
- In a large mixer, blend together both sugars and softened butter until creamy. Add eggs and vanilla and mix until just combined.
- Add in flour mixture and blend until just combined. Fold in chocolate chips. Scoop onto cookie sheet and bake in preheated oven for about 12-13 minutes. Let cool for a few minutes and then carefully take off cookie sheet onto a cooling rack.
