TOMATO AVOCADO SALAD

This was awesome! I also added yellow bell pepper and diced all of the veggies. We ate this on top of angel hair pasta and it was divine. Pretty colors, too! I served the salad on a huge leaf of lettuce for a nice presentation. This recipe make a big quantity, about 10 servings.



Be sure to use somewhat firm avocados so it doesn't get too mushy. Another suggestion for those who don't like the way the balsamic dressing changes the color of the salad: 1) as others have suggested, serve the salad before the avocado browns and 2) make your own dressing using WHITE balsamic vinegar. This will help retain the bright colors of the salad. My family loved it!
